I had something called the Napa Chicken at Longhorns Steakhouse a few weeks ago and it was DELICIOUS! I have no idea how they made theirs, other than what was listed as the description on the menu, but I cam home wanting it again….so I made my own version. I have to say, while Longhorn’s was really good (and I will have it again!), mine was quiet a bit better! This was so super easy! Here is how I made it:

Ingredients

Instructions
  1. In a heated skillet, heat butter until it starts to turn a little brown. It will be very hot! Add chicken breasts and brown on each side 2-3 minutes.
  2. Turn heat to medium-high and cook until chicken juices run clear.
  3. Remove chicken from pan and let rest on a plate.
  4. In the same skillet, add olive oil and minced garlic. Brown garlic on medium heat.
  5. Pour in artichoke hearts and sun-dried tomatoes. Stir until thoroughly heated.
  6. Pour mixture over Chicken breasts and serve alone or over brown rice.
